- 1 can (14 oz) sweetened condensed milk
- 1 cup self-raising flour
- 2 cups fresh rhubarb, diced
- Optional: confectioner’s sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch square baking dish or line it with parchment paper.
- In a large mixing bowl, stir together the sweetened condensed milk and self-raising flour until smooth.
- Fold in the diced rhubarb, making sure it’s evenly distributed throughout the batter.
- Pour the batter into your prepared baking dish and spread it evenly with a spatula.
- Bake for 25–30 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Let the bars cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Once cooled, dust with confectioner’s sugar if desired. Cut into squares and serve.
Notes
- Be sure to pat the diced rhubarb dry before folding it into the batter to avoid excess moisture.
- If you don’t have self-raising flour, use 1 cup all-purpose flour + 1 1/2 tsp baking powder + a pinch of salt.
- These bars are best stored in the fridge if not eaten the same day.
