- 2 lbs baby potatoes, halved or quartered
- 6 slices bacon, cooked and crumbled
- 1 cup ranch dressing
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup green onions, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
- In a large bowl, combine the ranch dressing, sour cream, mayonnaise, and Dijon mustard.
- Add the cooled potatoes, crumbled bacon, green onions, dill, and parsley to the dressing mixture.
- Gently toss to combine all ingredients until the potatoes are well coated.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving to allow flavors to meld.
Notes
- For a lighter version, you can use Greek yogurt instead of sour cream and mayonnaise.
