A delightful Berry and Peach Cheesecake that combines the sweetness of fresh fruits with a creamy cheesecake base, perfect for summer desserts.

- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
- 2 ripe peaches, sliced
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, ¼ cup sugar, and melted butter until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add 1 cup sugar and vanilla extract, and mix until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream until smooth.
- Pour the cream cheese mixture over the crust in the springform pan.
- Top with fresh mixed berries and sliced peaches.
- Bake for 50-60 minutes or until the center is set and slightly jiggly.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- For best results, use room temperature ingredients.
- Feel free to substitute other fruits based on your preference.
- Serve with whipped cream for an extra indulgent treat.
