Description

A delightful Berry and Peach Cheesecake that combines the sweetness of fresh fruits with a creamy cheesecake base, perfect for summer desserts.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, sliced

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, ¼ cup sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese until smooth.
  5. Add 1 cup sugar and vanilla extract, and mix until well combined.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Stir in the sour cream until smooth.
  8. Pour the cream cheese mixture over the crust in the springform pan.
  9. Top with fresh mixed berries and sliced peaches.
  10. Bake for 50-60 minutes or until the center is set and slightly jiggly.
  11. Allow to cool, then refrigerate for at least 4 hours before serving.
