- 2 cups uncooked elbow macaroni
- 3 hard-cooked eggs, chopped

- 1 small red bell pepper, seeded and chopped
- 1/4 cup dill pickle relish
- 2 cups mayonnaise
- 3 tablespoons prepared yellow mustard
- 3/4 cup white sugar
- 1 1/2 tablespoons white vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon celery seed
- 1/4 cup grated carrot (optional)
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked macaroni, chopped hard-cooked eggs, onion, celery, red bell pepper, and dill pickle relish.
- In a separate bowl, whisk together the mayonnaise, yellow mustard, sugar, white vinegar, salt, black pepper, and celery seed until smooth.
- Pour the dressing over the macaroni mixture and stir gently until everything is well coated. If using, fold in the grated carrot and chopped parsley for added color and flavor.
