Description
This high-protein Blueberry Cottage Cheese Ice Cream is creamy, fruity, and incredibly easy to make. With only 3 ingredients, it’s a healthy and refreshing dessert that doesn’t taste like cottage cheese at all!
Ingredients
Scale
- 1 cup full fat cottage cheese
- 1/3 cup fresh blueberries
- 1 tablespoon sweetener of choice (optional)
Instructions
- Blend Until Smooth: Add cottage cheese, blueberries, and optional sweetener to a high-speed blender or food processor. Blend until smooth and creamy, scraping down the sides as needed.
- Transfer and Freeze: Pour the mixture into a loaf pan or freezer-safe container. Spread evenly. Cover with plastic wrap, pressing it directly onto the surface to prevent freezer burn. Freeze for at least 2 hours, or until firm.
- Serve and Enjoy: Let sit at room temperature for 5–10 minutes to soften slightly. Scoop into bowls and serve as is or with toppings like fresh berries, crushed nuts, or granola.
Notes
- If using frozen blueberries, allow them to thaw slightly before blending for smoother results.
- Add a splash of vanilla or a pinch of cinnamon for extra flavor depth.
- Store leftovers tightly covered in the freezer for up to 1 week.
