  • 2 boneless, skinless chicken breasts, grilled and sliced
  • 1 pound penne pasta
  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1/3 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. Grill over medium heat for about 6-7 minutes on each side, or until fully cooked. Remove from the grill and slice.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red onion, sautéing until fragrant and the onion is translucent, about 2-3 minutes.
  4. Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften. Stir in the cooked pasta, sliced chicken, balsamic vinegar, and fresh basil. Toss everything together until well combined.
