- 2 boneless, skinless chicken breasts, grilled and sliced
- 1 pound penne pasta
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- 1/3 cup olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Season the chicken breasts with salt and pepper. Grill over medium heat for about 6-7 minutes on each side, or until fully cooked. Remove from the grill and slice.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red onion, sautéing until fragrant and the onion is translucent, about 2-3 minutes.
- Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften. Stir in the cooked pasta, sliced chicken, balsamic vinegar, and fresh basil. Toss everything together until well combined.
- Remove from heat and sprinkle with grated Parmesan cheese. Adjust seasoning with salt and pepper to taste. Serve warm and enjoy this delicious and colorful pasta dish!
