  • 1 cup onion, chopped
  • 1 cup carrots, shredded
  • 1 to cups cooked cheese tortellini (about ½ of a 9 oz package)
  • 1 cup sour cream
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (6 oz) box Stove Top stuffing mix, chicken flavor
  • ½ cup butter, softened
  • Salt and pepper, to taste
  • Optional: ¼ teaspoon garlic powder or Italian seasoning for extra flavor.

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the sliced zucchini, chopped onion, and shredded carrots. Season with salt and pepper, and add garlic powder or Italian seasoning if desired.
  3. In another bowl, mix together the cooked cheese tortellini, sour cream, and cream of chicken soup until well combined. Add the vegetable mixture and stir until everything is evenly coated.
  4. In a small bowl, combine the Stove Top stuffing mix with the softened butter, mixing until the stuffing is moistened.
  5. Pour the tortellini and vegetable mixture into the prepared baking dish. Evenly spread the stuffing mixture over the top.
  6. Cover the baking dish with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and the casserole is heated through.
