- 6 cups zucchini, sliced (about 3 medium zucchinis)
- 1 cup onion, chopped
- 1 cup carrots, shredded
- 1 to 1¼ cups cooked cheese tortellini (about ½ of a 9 oz package)
- 1 cup sour cream
- 1 (10.5 oz) can cream of chicken soup
- 1 (6 oz) box Stove Top stuffing mix, chicken flavor
- ½ cup butter, softened
- Salt and pepper, to taste
- Optional: ¼ teaspoon garlic powder or Italian seasoning for extra flavor.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, combine the sliced zucchini, chopped onion, and shredded carrots. Season with salt and pepper, and add garlic powder or Italian seasoning if desired.
- In another bowl, mix together the cooked cheese tortellini, sour cream, and cream of chicken soup until well combined. Add the vegetable mixture and stir until everything is evenly coated.
- In a small bowl, combine the Stove Top stuffing mix with the softened butter, mixing until the stuffing is moistened.
- Pour the tortellini and vegetable mixture into the prepared baking dish. Evenly spread the stuffing mixture over the top.
- Cover the baking dish with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and the casserole is heated through.
- Remove from the oven and let it cool slightly before serving. Enjoy this cheesy and comforting casserole as a delightful main dish or side!
