Description
A refreshing and easy-to-make cottage cheese lemon mousse that is perfect for a light dessert.
Ingredients

- 2 cups plain cottage cheese
- 1/4 cup sugar-free maple syrup (adjust to taste)
- 2 tablespoons grated lemon zest
- 2 tablespoons lemon juice
- 1/2 tablespoon gelatin powder
- 3 tablespoons water
- 1 teaspoon vanilla essence (optional)
Instructions
- In a small bowl, combine 1/2 tablespoon of gelatin powder with 3 tablespoons of water. Stir until the gelatin is completely dissolved and set aside to bloom for about 5 minutes.
- After blooming, gently heat the gelatin mixture in the microwave for 15-20 seconds or on the stove over low heat until it becomes liquid.
- In a blender or food processor, add cottage cheese, sugar-free maple syrup, lemon zest, lemon juice, vanilla extract (optional), and the warmed gelatin mixture. Blend at high speed until smooth and creamy.
- Taste the mixture and adjust the sweetness or lemon flavor by adding more maple syrup or lemon juice if desired. Blend again to incorporate any additional ingredients.
- Pour the mousse mixture into individual serving cups or bowls. Cover with plastic wrap or lids and refrigerate for 2-3 hours or until set to a firm consistency.
- Once set, remove from the refrigerator and garnish with fresh berries, whipped cream, or a sprig of mint before serving.
Notes
- For a vegan version, substitute gelatin with agar-agar.
- Adjust the sweetness according to your preference.
- Can be stored in the refrigerator for up to 3 days.
