Description

A refreshing and easy-to-make cottage cheese lemon mousse that is perfect for a light dessert.


Ingredients

  • 2 cups plain cottage cheese
  • 1/4 cup sugar-free maple syrup (adjust to taste)
  • 2 tablespoons grated lemon zest
  • 2 tablespoons lemon juice
  • 1/2 tablespoon gelatin powder
  • 3 tablespoons water
  • 1 teaspoon vanilla essence (optional)

Instructions

  1. In a small bowl, combine 1/2 tablespoon of gelatin powder with 3 tablespoons of water. Stir until the gelatin is completely dissolved and set aside to bloom for about 5 minutes.
  2. After blooming, gently heat the gelatin mixture in the microwave for 15-20 seconds or on the stove over low heat until it becomes liquid.
  3. In a blender or food processor, add cottage cheese, sugar-free maple syrup, lemon zest, lemon juice, vanilla extract (optional), and the warmed gelatin mixture. Blend at high speed until smooth and creamy.
  4. Taste the mixture and adjust the sweetness or lemon flavor by adding more maple syrup or lemon juice if desired. Blend again to incorporate any additional ingredients.
  5. Pour the mousse mixture into individual serving cups or bowls. Cover with plastic wrap or lids and refrigerate for 2-3 hours or until set to a firm consistency.
  6. Once set, remove from the refrigerator and garnish with fresh berries, whipped cream, or a sprig of mint before serving.

Notes

  • For a vegan version, substitute gelatin with agar-agar.
  • Adjust the sweetness according to your preference.
