Ingredients

- 1 english cucumber
- 8 ounces medium pasta (like penne or rotini)
- 1/2 sweet white onion
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 tablespoons fresh dill, chopped
- 2 tablespoons vinegar
- Black pepper, to taste
Instructions
- Prepare the Dressing: Combine all dressing ingredients in a small bowl and mix well. Set aside.
- Prepare the Onions: Thinly slice the onion and soak in cold water to mellow the flavor.
- Cook and Cool the Pasta: Cook pasta al dente according to package directions, then cool under cold water and drain.
- Slice the Cucumber: Cut the cucumber in half lengthwise, remove seeds, and slice thinly.
- Assemble the Salad: In a large bowl, combine pasta, onion, cucumber, and dressing. Toss well and let sit for at least 40 minutes before serving.
Notes
- Soaking the onions in cold water helps reduce their sharpness.
- For added flavor, consider including other vegetables or proteins.
