Ingredients

  • 300ml water
  • 65g sugar
  • 240ml limoncello
  • 45ml lemon juice
  • 48 ladyfinger biscuits (approximately two 200g packs)
  • 680g chilled mascarpone cheese
  • 425g lemon curd
  • 80ml limoncello
  • 60ml lemon juice
  • 480ml heavy cream
  • 65g sugar
  • 240ml heavy cream (for topping)
  • 3045g powdered sugar (adjust to taste)
  • Zest of 1 lemon

Instructions

  1. Prepare the Limoncello Syrup: In a saucepan, combine water and sugar over medium heat. Stir until the sugar dissolves. Remove from heat and let cool. Once cooled, stir in limoncello and lemon juice. Set aside.
  2. Make the Tiramisu Mixture: In a large mixing bowl, combine chilled mascarpone cheese, lemon curd, limoncello, lemon juice, and sugar. Whip until smooth and creamy.
  3. Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  4. Assemble the Tiramisu: Quickly dip each ladyfinger into the limoncello syrup, ensuring they are soaked but not soggy. Layer half of the soaked ladyfingers in the bottom of a rectangular dish. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  5. Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  6. Optional Topping: Before serving, whip the heavy cream with powdered sugar until stiff peaks form. Spread or pipe the whipped cream over the top of the tiramisu and sprinkle with lemon zest.
  7. Serve: Slice and serve chilled, enjoying the zesty and creamy layers of this delightful Limoncello Tiramisu!
