Description

A simple and delicious recipe for fluffy keto cottage cheese cloud bread, perfect for low-carb diets.


Ingredients

  • 6 eggs, separated (room temperature)
  • ½ teaspoon white vinegar
  • 4 ounces cottage cheese
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup whey protein powder
  • ¼ cup egg white protein powder
  • 1 tablespoon Allulose (optional)
  • Optional toppings: bagel seasoning
  • 1 teaspoon vanilla extract (optional for French Toast only)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Place your egg whites in a stand mixer or use an electric hand mixer along with a splash of vinegar. Whip the egg whites on high speed until stiff peaks form, about 10-15 minutes. Set aside.
  3. In a separate bowl, whisk together the egg yolks and the remaining ingredients until well combined, or blend until smooth.
  4. Gently fold a small amount of the egg yolk mixture into the whipped egg whites, incorporating it a little at a time until well mixed.
  5. Pour the combined mixture into a parchment-lined and greased 5″x9″ loaf pan or onto a parchment-lined baking sheet for rolls. Bake for 50 minutes or until a toothpick comes out clean and the top is golden brown.
  6. After baking, turn off the oven but do not open the door. Let the loaf or rolls rest in the oven for an additional 10 minutes.
  7. Remove from the oven, let cool slightly, and enjoy warm or cooled for sandwiches.

  • For a French Toast variation, add vanilla extract.
