- ¼ cup ghee or butter, divided
- 1 tablespoon olive oil
- 1 lb yukon gold potatoes, cut into ½ inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plus more to taste
- 1 ¼ lb sirloin steak, cut into ½ inch cubes
Instructions
- In a large skillet, heat 2 tablespoons of ghee or butter and olive oil over medium heat.
- Add the cubed potatoes and season with salt and pepper. Cook until golden and tender, about 10 minutes.
- While the potatoes are cooking, season the steak cubes with thyme, oregano, salt, and pepper.
- Push the potatoes to one side of the skillet and add the remaining ghee or butter. Add the minced garlic and steak cubes to the skillet.
- Cook the steak for about 3-4 minutes, stirring occasionally, until browned and cooked to your desired doneness.
- Mix the steak and potatoes together, cooking for an additional minute to combine flavors.
