Ingredients

  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. In a large skillet, heat 2 tablespoons of ghee or butter and olive oil over medium heat.
  2. Add the cubed potatoes and season with salt and pepper. Cook until golden and tender, about 10 minutes.
  3. While the potatoes are cooking, season the steak cubes with thyme, oregano, salt, and pepper.
  4. Push the potatoes to one side of the skillet and add the remaining ghee or butter. Add the minced garlic and steak cubes to the skillet.
  5. Cook the steak for about 3-4 minutes, stirring occasionally, until browned and cooked to your desired doneness.
  6. Mix the steak and potatoes together, cooking for an additional minute to combine flavors.
