  • 1 block sharp cheddar cheese, shredded (about 2 cups)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/2 stick butter, melted
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large bowl, combine the sliced zucchini, yellow squash, diced tomatoes, and chopped onion. Drizzle with olive oil and season with salt, pepper, garlic powder, and dried oregano. Toss to coat the vegetables evenly.
  3. In a separate bowl, mix the cooked rice, crumbled bacon, shredded cheddar cheese, and grated Parmesan cheese. Add the vegetable mixture to the rice and cheese, stirring until well combined.
  4. Pour the mixture into the prepared baking dish, spreading it out evenly. Drizzle the melted butter over the top for added richness.
