  • 175g caster sugar
  • 3 large eggs
  • 1 tbsp coffee extract
  • 175g self-raising flour
  • ¾ tsp baking powder
  • 85g softened butter (for icing)
  • 225g sifted icing sugar
  • 1 tbsp milk
  • 1 tbsp coffee extract (for icing)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line a rectangular baking tin (approximately 20x30cm) with baking parchment.
  2. In a large mixing bowl, beat together the cold margarine and caster sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the coffee extract.
  3. Sift the self-raising flour and baking powder into the bowl, then gently fold the dry ingredients into the wet mixture until just combined.
  4. Pour the batter into the prepared baking tin and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center comes out clean. Allow to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  5. In a separate bowl, beat the softened butter until creamy. Gradually add the sifted icing sugar, mixing until smooth. Stir in the milk and coffee extract until well combined.
  6. Once the cake has cooled completely, spread the coffee icing evenly over the top. Cut into squares or rectangles for serving.
