- 170g cold margarine
- 175g caster sugar
- 3 large eggs
- 1 tbsp coffee extract
- 175g self-raising flour
- ¾ tsp baking powder
- 85g softened butter (for icing)
- 225g sifted icing sugar
- 1 tbsp milk
- 1 tbsp coffee extract (for icing)
Instructions
- Preheat your oven to 180°C (350°F). Grease and line a rectangular baking tin (approximately 20x30cm) with baking parchment.
- In a large mixing bowl, beat together the cold margarine and caster sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the coffee extract.
- Sift the self-raising flour and baking powder into the bowl, then gently fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared baking tin and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center comes out clean. Allow to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
- In a separate bowl, beat the softened butter until creamy. Gradually add the sifted icing sugar, mixing until smooth. Stir in the milk and coffee extract until well combined.
- Once the cake has cooled completely, spread the coffee icing evenly over the top. Cut into squares or rectangles for serving.
