A creamy and tangy coleslaw with a hint of curry, perfect as a side dish or light lunch.
Ingredients

- 500g white cabbage, finely shredded
- 3 carrots, peeled and grated or sliced into thin strips
- 1 small onion, finely sliced
- 300g celeriac, peeled and cut into thin matchsticks
- 3 celery sticks, finely sliced
- 8 tbsp mayonnaise
- 150ml soured cream
- 2 tbsp mild curry powder
- 3 tbsp mango chutney
- Juice of 1 lemon
- A small bunch of fresh coriander or flat-leaf parsley, chopped
- Salt and freshly ground black pepper, to taste
Instructions
- In a large mixing bowl, combine the finely shredded white cabbage, grated carrots, sliced onion, matchstick celeriac, and finely sliced celery. Toss well to mix.
- In a separate bowl, whisk together the mayonnaise, soured cream, mild curry powder, mango chutney, and lemon juice until smooth. Stir in the chopped fresh coriander or parsley, and season with salt and freshly ground black pepper to taste.
- Pour the dressing over the vegetable mixture and toss until everything is well coated. Adjust seasoning if necessary.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

- Adjust the amount of curry powder to taste for a milder or spicier flavor.
