Description

A delicious and creamy pumpkin cheesecake inspired by Olive Garden, perfect for fall celebrations.

Ingredients

Scale
  • 1 1/2 cups ginger snap cookie crumbs
  • 6 tablespoons salted butter (melted)
  • 1 tablespoon granulated sugar
  • 22 ounces cream cheese (2 ¾ blocks, room temperature)
  • 2/3 cup granulated sugar
  • 2/3 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 15 ounces pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 10 ounces sour cream (room temperature)
  • 3 large eggs (whisked, room temperature)

Instructions

  1. Plan ahead so that the refrigerated ingredients reach room temperature.
  2. Spray a 9″ springform pan with cooking spray.
  3. Preheat the oven to 325º Fahrenheit.
  4. In a medium bowl, mix together the gingersnap crumbs, melted butter, and sugar. Press the crumbs into the bottom of the springform pan.
  5. Bake the crust for about 6 minutes or until golden brown. Allow the crust to cool completely.
  6. Wrap the outside of the springform pan with two layers of foil to seal the bottom.
  7. In a large bowl, cream the cream cheese with a hand mixer on low speed until smooth.
  8. Mix in the sugars, vanilla extract, and pumpkin puree until well combined.
  9. Add the cinnamon, nutmeg, and cloves, then mix in the sour cream until blended.
  10. Whisk the eggs in a small bowl and gently add them to the cream cheese mixture, mixing just until combined.
  11. Pour the batter into the springform pan with the pre-baked crust and tap the pan on the counter to release air bubbles.
  12. Prepare a water bath by pouring about an inch and a half of water into a baking pan and placing the springform pan inside.
  13. Bake the cheesecake in the water bath for 65 minutes without opening the oven.
  14. After 65 minutes, turn off the oven and let the cheesecake sit in the oven for another 5 hours.
  15. Remove the cheesecake from the oven and the pan, then refrigerate overnight.
  16. Serve the next day with whipped cream and caramel sauce.

Notes

  • Ensure all ingredients are at room temperature for best results.
  • Do not open the oven during baking to prevent cracks.
  • Allow the cheesecake to cool completely before refrigerating.
