Description

A refreshing and simple salad featuring kale, peaches, and blueberries, perfect for summer.


Ingredients

Scale
  • 1 bunch of kale, chopped
  • 23 fresh peaches, pitted & chopped
  • 1 cup blueberries
  • ¼ cup toasted pepitas
  • 1 tsp extra virgin olive oil
  • ½ lemon, juiced
  • 2 medium lemons, juiced (for vinaigrette)
  • 4 tsp honey (for vinaigrette)
  • Splash of extra light tasting olive oil (about 1-2 tsp, for vinaigrette)
  • Cracked black pepper, to taste (for vinaigrette)

Instructions

  1. Chop the kale and place it in a large bowl.
  2. Add the chopped peaches and blueberries to the bowl with the kale.
  3. Toast the pepitas in a dry skillet over medium heat until golden brown, then add to the salad.
  4. In a separate bowl, whisk together the lemon juice, honey, olive oil, and cracked black pepper to make the vinaigrette.
  5. Drizzle the vinaigrette over the salad and toss gently to combine.
  6. Serve immediately and enjoy!

Notes

  • To toast pepitas, heat a skillet over medium heat and add the seeds, stirring frequently until they are golden and fragrant.
  • Extra virgin olive oil can be substituted with another light oil if desired.
