Description
A refreshing and simple salad featuring kale, peaches, and blueberries, perfect for summer.
Ingredients
Scale
- 1 bunch of kale, chopped
- 2–3 fresh peaches, pitted & chopped
- 1 cup blueberries
- ¼–⅓ cup toasted pepitas
- 1 tsp extra virgin olive oil
- ½ lemon, juiced
- 2 medium lemons, juiced (for vinaigrette)
- 4 tsp honey (for vinaigrette)
- Splash of extra light tasting olive oil (about 1-2 tsp, for vinaigrette)
- Cracked black pepper, to taste (for vinaigrette)
Instructions
- Chop the kale and place it in a large bowl.
- Add the chopped peaches and blueberries to the bowl with the kale.
- Toast the pepitas in a dry skillet over medium heat until golden brown, then add to the salad.
- In a separate bowl, whisk together the lemon juice, honey, olive oil, and cracked black pepper to make the vinaigrette.
- Drizzle the vinaigrette over the salad and toss gently to combine.
- Serve immediately and enjoy!
Notes
- To toast pepitas, heat a skillet over medium heat and add the seeds, stirring frequently until they are golden and fragrant.
- Extra virgin olive oil can be substituted with another light oil if desired.
