- 1 cup creamy all natural peanut butter, the only ingredients should be peanuts and salt
- 1/2 cup pure maple syrup
- 1 tablespoon vanilla extract
- 1 cup gluten free rolled oats
- 1 cup semi sweet chocolate chips
- 2 eggs
- 1/2 teaspoon baking powder
- 1/8 teaspoon sea salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the peanut butter, maple syrup, and vanilla extract until smooth.
- Add the eggs and mix until fully incorporated.
- In a separate bowl, mix the rolled oats, baking powder, and sea salt.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Fold in the chocolate chips.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a nut-free version, substitute peanut butter with sunflower seed butter.
- Store cookies in an airtight container for up to a week.
- These cookies can be frozen for longer storage.
