- 3–4 medium zucchini, sliced
- 2 jalapeños, finely chopped
- 1 tomato, diced
- ½ onion, finely chopped
- 4 slices bacon, cooked and crumbled
- 1 cup pepper jack cheese, shredded
- ½ cup parmesan cheese, grated
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons melted butter
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or melted butter.
- In a large bowl, combine the sliced zucchini, chopped jalapeños, diced tomato, and chopped onion. Drizzle with olive oil and season with garlic powder, oregano, salt, and pepper. Toss to coat evenly.
- Gently fold in the crumbled bacon, pepper jack cheese, and half of the parmesan cheese into the vegetable mixture.
- Pour the mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining parmesan cheese on top.
- Drizzle the melted butter over the top and bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
