  • 2 tbsp Greek yogurt or sour cream
  • 1 tsp vanilla extract
  • Pink and red food gel (for strawberry flavor)
  • 1 tsp strawberry flavoring
  • Yellow food gel (for mango flavor)
  • 1 tsp mango flavoring
  • 2 tsp tequila (optional)
  • 1 batch American or Swiss Meringue Buttercream
  • Pink/red food gel (for strawberry frosting)
  • Strawberry flavoring (for frosting)
  • Yellow food gel (for mango frosting)
  • Mango flavoring (for frosting)
  • 1 cup granulated sugar (for decoration)
  • 10 limes, cut into 40 wedges (for decoration)
  • 10 strawberries, halved (for decoration)

Instructions

  1. Preheat your oven to 275°F (fan-forced) or 320°F (conventional). Line two cupcake tins with liners.
  2. In a large bowl, whisk together flour, caster sugar, baking powder, and salt. Add the softened butter and mix until the mixture looks sandy and crumbly.
  3. In another bowl, whisk the eggs, milk, vegetable oil, Greek yogurt, vanilla extract, and tequila (if using) until well combined.
  4. Combine the wet ingredients with the dry ingredients. Divide the batter into two bowls: tint one pink/red and flavor with strawberry extract; tint the other yellow and flavor with mango extract.
  5. Pipe alternating layers of strawberry and mango batters into each cupcake liner.
  6. Bake for 40–50 minutes or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.
  7. Prepare a batch of American or Swiss Meringue Buttercream. Divide into two portions: tint one pink/red with strawberry flavoring and the other yellow with mango flavoring.
  8. Lightly dip the tops of the cooled cupcakes in water and roll them in granulated sugar to mimic a margarita rim.
  9. Pipe alternating swirls of strawberry and mango frosting onto each cupcake.
  10. Garnish each cupcake with a lime wedge and a halved strawberry. Serve and enjoy!
