- Yellow food gel (for mango frosting)
- Mango flavoring (for frosting)
- 1 cup granulated sugar (for decoration)
- 10 limes, cut into 40 wedges (for decoration)
- 10 strawberries, halved (for decoration)
Instructions
- Preheat your oven to 275°F (fan-forced) or 320°F (conventional). Line two cupcake tins with liners.
- In a large bowl, whisk together flour, caster sugar, baking powder, and salt. Add the softened butter and mix until the mixture looks sandy and crumbly.
- In another bowl, whisk the eggs, milk, vegetable oil, Greek yogurt, vanilla extract, and tequila (if using) until well combined.
- Combine the wet ingredients with the dry ingredients. Divide the batter into two bowls: tint one pink/red and flavor with strawberry extract; tint the other yellow and flavor with mango extract.
- Pipe alternating layers of strawberry and mango batters into each cupcake liner.
- Bake for 40–50 minutes or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.
- Prepare a batch of American or Swiss Meringue Buttercream. Divide into two portions: tint one pink/red with strawberry flavoring and the other yellow with mango flavoring.
- Lightly dip the tops of the cooled cupcakes in water and roll them in granulated sugar to mimic a margarita rim.
- Pipe alternating swirls of strawberry and mango frosting onto each cupcake.
- Garnish each cupcake with a lime wedge and a halved strawberry. Serve and enjoy!
