- 3 medium zucchini, sliced
- ½ cup canned black beans, rinsed and drained
- ½ cup corn (fresh, frozen, or canned)
- 1 medium tomato, diced
- 1 tablespoon taco seasoning
- 1 cup shredded cheddar cheese
- ½ cup shredded pepper jack cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 2 tablespoons melted butter
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or a little olive oil.
- In a large bowl, combine the sliced zucchini, black beans, corn, diced tomato, taco seasoning, garlic powder, and olive oil. Toss until everything is well coated.
- Spread the zucchini mixture evenly in the prepared baking dish.
- Sprinkle the shredded cheddar and pepper jack cheese evenly over the top of the zucchini mixture. Drizzle the melted butter over the cheese for added flavor and richness.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
- Remove from the oven and let it cool slightly before serving. This Tex-Mex Zucchini Bake is delicious on its own or served with a side of salsa or guacamole!
