Description
Crockpot Marry Me Chicken Orzo Soup—creamy, flavorful, and filled with tender chicken, herbs, and orzo. A cozy one-pot slow cooker meal.
Ingredients
Base:
1 tbsp olive oil
1 ½ lbs boneless, skinless chicken breasts or thighs
1 small onion, diced
2 cloves garlic, minced
1 large carrot, diced
2 ribs celery, diced
Liquids & Pasta:
1 (14.5 oz) can diced tomatoes, undrained
4 cups chicken broth
1 cup orzo pasta
Seasoning:
1 tsp dried oregano
1 tsp dried basil
½ tsp red pepper flakes (optional)
Salt and pepper, to taste
Finish & Garnish:
2 cups fresh spinach, chopped
Freshly grated Parmesan cheese
Instructions
1. Heat olive oil and sauté onion, garlic, carrot, and celery for 3–4 minutes.
2. Transfer to slow cooker. Add chicken, tomatoes, broth, oregano, basil, and red pepper flakes.
3. Cover and cook on Low for 6–7 hours or High for 3–4 hours.
4. Remove chicken, shred, and return to pot. Add orzo and cook 20–25 minutes more.
5. Stir in spinach to wilt. Season to taste.
6. Serve warm, topped with Parmesan cheese.
Notes
Add orzo at the end to avoid overcooking.
Substitute thighs for richer flavor.
Freeze before adding spinach and pasta for best texture.
