- 2 large apples, peeled, cored, and diced (1 Granny Smith and 1 Honeycrisp recommended)
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 teaspoons apple cider (or apple juice)
- 1 teaspoon cornstarch
- 2 cups all-purpose flour, sifted
- 4 tablespoons cold butter, cubed
- 2 egg yolks
- 1/3 cup HOT milk
- 1/4 teaspoon salt
- 1/2 teaspoon powdered sugar (for glaze)
- 1 tablespoon vanilla (for glaze)
- 1/2 cup milk (for glaze)
- Oil, for frying
Instructions
- Peel, core, and dice the apples into small cubes.
- Combine apples, brown sugar, cinnamon, and vanilla in a saucepan and cook over medium heat for about 3 minutes.
- In a small bowl, combine apple cider (or apple juice) and cornstarch, then pour into the saucepan and cook on high for an additional 3 minutes until thickened.
- Remove from heat and set aside.
- Sift flour in a large mixing bowl, then cut in cold butter until it resembles tiny lumps.
- In a separate bowl, combine egg yolks and salt, then gradually stir in hot milk.
- Pour the milk and egg mixture into the flour mixture and stir until a dough forms.
- Knead the dough for about 1 minute until smooth, then divide into 6 pieces and roll into balls.
- Roll each ball into circles using a rolling pin or glass.
- Fill each circle with 2 tablespoons of apple pie filling, fold in half, and pinch edges to seal.
- Heat oil in a pot to 350 degrees Fahrenheit.
- Fry the pies for about 2 minutes per side until golden brown, then place on paper towels to dry.
- Make the glaze by whisking together powdered sugar, vanilla, and milk until smooth.
- Glaze the warm pies and let set for a few minutes before serving.

- Excess dough can be used to make additional pies.
