A hearty and comforting dish that combines tender zucchini and squash with savory chicken, crispy bacon, and a blend of cheesy goodness, perfect for a family dinner or meal prep!


Ingredients

  • 2 medium-sized zucchini, sliced
  • 2 medium-sized yellow squash, sliced
  • 2 tomatoes, diced
  • 1/2 white onion, chopped
  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 46 slices of bacon, cooked and crumbled
  • 1 block sharp cheddar cheese, shredded (about 8 oz)
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1/2 stick of butter, melted
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large bowl, combine the sliced zucchini, yellow squash, diced tomatoes, and chopped onion. Drizzle with olive oil and season with salt, pepper, garlic powder, and dried oregano. Toss to coat evenly.
  3. Spread half of the vegetable mixture in the bottom of the prepared baking dish. Layer the shredded chicken and crumbled bacon on top. Add the remaining vegetable mixture over the chicken and bacon.
  4. Sprinkle the shredded cheddar cheese and grated parmesan cheese evenly over the top of the layered ingredients.
  5. Drizzle the melted butter over the cheese layer, ensuring even coverage.
  6. Cover the baking dish with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  7. Remove from the oven and let it cool for a few minutes before serving. Enjoy this delicious and cheesy loaded chicken bake!
