Description

A delicious and indulgent treat combining a biscuit base, homemade caramel, and a chocolate Malteser layer.


Ingredients

  • 21 oz malted milk biscuits
  • 8.8 oz unsalted butter (for biscuit base)
  • 7 oz unsalted butter (for caramel)
  • 3 tbsp caster sugar
  • 4 tbsp golden syrup
  • 14 oz condensed milk (one tin)
  • 7 oz milk chocolate
  • 714 oz Malteser spread
  • 3.57 oz Maltesers

Instructions

  1. In a food processor, blitz the malted milk biscuits until they resemble fine crumbs.
  2. Melt the unsalted butter and mix it with the biscuit crumbs until well combined.
  3. Press this mixture firmly into the base of a lined 9×9 inch (23×23 cm) square baking tin to form an even layer.
  4. Chill in the fridge while you prepare the caramel.
  5. In a saucepan over medium heat, melt the unsalted butter, caster sugar, and golden syrup together, stirring until the sugar has dissolved.
  6. Add the condensed milk and bring to a gentle boil, stirring continuously for about 5-7 minutes until the mixture thickens and turns a golden color.
  7. Pour the caramel over the chilled biscuit base and spread it evenly.
  8. Allow it to cool and set at room temperature or in the fridge.
  9. Melt the milk chocolate in a heatproof bowl over simmering water or in the microwave in short bursts.
  10. Once melted, spread the Malteser spread over the cooled caramel layer, followed by the melted chocolate.
  11. Top with whole Maltesers, pressing them gently into the chocolate layer.
  12. Refrigerate the entire tray for at least 2 hours or until set.
  13. Once firm, cut into squares or bars and serve.

Notes

  • For a richer flavor, use high-quality chocolate.
  • Store in an airtight container in the fridge for up to a week.
  • Feel free to adjust the amount of Maltesers on top according to your preference.
