Ingredients

  • 4 medium-sized apples (3 cups diced and peeled)
  • ¼ cup granulated sugar (50 grams) + 1 teaspoon
  • 1 teaspoon cinnamon
  • 1 whole star anise
  • 2 ounces butter (60 grams) + 1 tablespoon
  • 1 tablespoon cornstarch
  • 1 sheet puff pastry (about 8.5 ounce/240 grams)
  • 1 tablespoon powdered sugar for dusting (optional)

Instructions

  1. Place a medium saucepan on the stove. Add apples, 1/4 cup sugar, cinnamon, star anise, and 1/8 cup water. Turn on the stove to high. Bring it to a boil, then reduce the heat to medium-low and cook for 15-20 minutes, or until the apples are tender.
  2. Add 2 ounces of butter and shortly after a cornstarch slurry (cornstarch mixed with 2 tablespoons water). Mix until the liquid thickens. Turn off and set aside to cool down.
  3. When the sauce is cooled down, preheat oven to 400 Fahrenheit/200 Celsius.
  4. Meanwhile, place the rolled-out puff pastry sheet onto a baking sheet/tray lined with parchment paper. Spoon the apple pie filling in the middle of the sheet, lengthwise. Fold over one side, then another. Pinch the edges together.
  5. With the help of the parchment paper, roll carefully the strudel over so that the folded part is at the bottom. Score the top of the pastry with a knife.
  6. Brush with melted butter (1 tablespoon) and sprinkle with a teaspoon of granulated sugar.
  7. Bake in a preheated oven for 20 minutes or until golden brown and nicely puffed.
  8. Best enjoyed warm the same day as is or with a scoop of ice cream!
